Bring the water to a boil in a medium saucepan.
Add lemongrass. If using stalks, crush lightly first with the flat side of knife blade to release the essential oils.
Boil for two minutes, then simmer for a further eight minutes.
Strain the liquid into a cup. Stir in the lime juice and honey if using.
Alternatively, pour boiling water over dried lemongrass leaves in a cup or teapot (one teaspoon per person depending on the brand), and leave to infuse for 5-10 minutes.
Serve hot as an herbal tea infusion, or chill in the refrigerator and pour over ice.
