Lemongrass tea or infusion, is an herbal drink made from the fragrant perennial grass, cymbopogon citratus. Fresh or dried leaves or lemongrass stalks boiled or steeped in hot water make a light, golden drink, with a silky, grassy taste and aroma, quite unlike the tart taste of lemon.
As well as making a low calorie, caffeine and tannin-free drink, lemongrass is also replete with positive health benefits. Rich in vitamins, minerals and antioxidants, lemongrass is an effective ‘teatox’ and mild diuretic effective to cleanse and alkalise the blood, and support liver and kidney function. It is also believed to boost metabolism enhancing overall immunity as well as promoting weight loss.

Although widely available in supermarkets around the world in fresh or dried form, lemongrass is an easy herb to grow, even in cooler climates. In the garden, it can be a feature or back of border ornamental grass with a graceful fountain-like growth habit. You may just find yourself falling in love with this fragrant grassy herb, indoors and outdoors.
Bring the water to a boil in a medium saucepan.
Add lemongrass. If using stalks, crush lightly first with the flat side of knife blade to release the essential oils.
Boil for two minutes, then simmer for a further eight minutes.
Strain the liquid into a cup. Stir in the lime juice and honey if using.
Alternatively, pour boiling water over dried lemongrass leaves in a cup or teapot (one teaspoon per person depending on the brand), and leave to infuse for 5-10 minutes.
Serve hot as an herbal tea infusion, or chill in the refrigerator and pour over ice.
