Fragrant Lemongrass Tea

Prep Time5 minsCook Time10 mins

Lemongrass tea or infusion, is an herbal drink made from the fragrant perennial grass, cymbopogon citratus

 2 cups water
 2 fresh lemongrass stalks
Juice of an Omani lime (optional)
1-2 tsp honey (optional for a sweet taste)
1

Bring the water to a boil in a medium saucepan.

2

Add lemongrass. If using stalks, crush lightly first with the flat side of knife blade to release the essential oils.

3

Boil for two minutes, then simmer for a further eight minutes.

4

Strain the liquid into a cup. Stir in the lime juice and honey if using.

5

Alternatively, pour boiling water over dried lemongrass leaves in a cup or teapot (one teaspoon per person depending on the brand), and leave to infuse for 5-10 minutes.

6

Serve hot as an herbal tea infusion, or chill in the refrigerator and pour over ice.
